Talked to Romain Bulland and Carlos Fernandes, managers of the Caveau de Nyon and asked them a few questions about this charming wine cellar.
Situated in the vaults of the Château de Nyon, in an authentic wine cellar, the Caveau de Nyon is the ideal place to get to know – and taste – one of the treasures of our magnificent region: the wines of the Nyon appellation.
What can you tell our readers about the Caveau de Nyon?
It’s quite simple, if you love the region and its excellent grape varieties, you will love the Caveau de Nyon. We can seat 50 people - across two rooms each with their unique charm - one of the rooms can be privatised, for groups of more than 15 people, whether this be an private celebrations or a company event. The other room is open to the general public from Tuesday to Saturday from 5pm onwards and Sunday from 11:30am to 6pm.
Tell us about the Nyon appellation
The Nyon appellation ranks second in the canton of Vaud and features a very wide range of white grape varieties (chasselas, doral, chardonnay, pinot gris, pinot blanc, sauvignon, gewurztraminer, viognier, riesling) and reds (gamay , Pinot Noir, Garanoir, Gamaret, Merlot, Cabernet, Sauvignon, Dornfelder).
The 270 hectares of vineyards of La Côte are lucky to have an ideal climate for growing vines: being close to the lake, with low rainfall and strong summer sunshine which are all factors conducive to an excellent ripening of the grapes. This is what attracts connoisseurs and amateurs alike.
What kind of food do you offer to accompany your wines ?
We offer a light bites menu that is very popular with our customers: pork rillettes, guacamole and spices, Portuguese chorizo flambéed with pomace, and let’s not forget the charcuterie boards. We also offer several varieties of cheese, such as baked camembert, fresh goat cheese with zest and jam, raclette, and five varieties of fondue. Wines can be ordered by the glass or by the bottle.
